Cheeseburger Soup
Description
This soup begins by browning ground beef and setting it aside. Onions, shredded carrots, celery, dried parsley, and basil cook in butter until tender. Chicken broth, diced potatoes, and the cooked beef combine and simmer until the potatoes soften.
A roux made from butter and flour thickens the broth, which is then brought to a boil and simmered briefly. Processed cheese or shredded cheddar cheese is stirred in with milk, salt, and black pepper to melt and create a creamy texture. The soup finishes by blending in sour cream off the heat for tanginess and richness.
The resulting soup carries the familiar savory and cheesy notes of a cheeseburger with added vegetables and potatoes to create a satisfying, thick soup. It can be served on its own or with bread for a filling meal.
Ingredients
- 1 pound ground beef
- ¾ cup onion chopped
- ¾ cup carrot shredded
- ¾ cup celery diced
- 1 teaspoon basil dried
- 1 teaspoon dried parsley flakes
- 4 tablespoons butter divided
- 3 cups chicken broth
- 4 cups potato peeled and diced
- ¼ cup all-purpose flour
- 2 cups processed cheese or 2 cups shredded cheddar cheese, Velveeta, cubed
- 1 ½ cups milk
- ¾ teaspoon salt
- ¼ to ½ teaspoon black pepper
- ¼ cup sour cream
Instructions
- Brown the ground beef in a 3-quart saucepan. Drain and set aside.
- In the same saucepan, add 1 tablespoon of butter, diced onion, shredded carrots, parsley flakes, basil, and celery. Cook until tender.
- Add the broth, potatoes, and beef and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes or until potatoes are tender.
- In a small skillet melt the remaining 3 tablespoons of butter and stir in the flour. Cook and stir for 3-5 minutes or until bubbly. Add to the soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low.
- Stir in the cheese, milk, salt, and pepper. Cook and stir until the cheese melts. Remove from heat and blend in sour cream.
