Description
Cheesecake Bites feature a classic graham cracker crust pressed into cupcake liners, topped with a creamy cheesecake filling made from cream cheese, vanilla, eggs, and sugar. Baked at 325°F until the centers are almost set, they have a firm yet creamy texture. After cooling and refrigerating, they develop a denser body typical of cheesecake but in a bite-sized form. The small size makes them easy to serve at gatherings or for portion control.
The sweet, buttery crust contrasts the smooth, mildly tangy filling. The recipe allows optional decoration such as coconut nests made from toasted or dyed coconut added before serving for an added visual and texture element.

Ingredients
Crust
- 1 cup graham cracker crumbs
- 2 Tablespoons sugar
- Tablespoons butter melted, unsalted
Cheesecake Filling
- 1 1/2 pounds cream cheese softened
- 1 teaspoon vanilla extract
- 3 large egg
- 3/4 cup sugar
Instructions
- Heat oven to 325 degrees F. Line muffin tin with 22 liners.
Crust
- Mix graham cracker crumbs, melted butter and sugar together.
- Divide graham cracker crumb mixture between liners and press down. measuring cup.
Cheesecake Batter
- Beat cream cheese, vanilla and 3/4 cup sugar in stand mixer or with a hand mixer until smooth.
- Add eggs, one at a time, scraping down sides after each addition and mix just until blended.
- Divide batter between cupcake liners. Bake at 325 degrees F. for 25-30 minutes or until centers are almost set.
- Cool completely. They refrigerate for 2 hours. Finish decorating if desired, just before serving.
Notes
- Line the muffin tin with cupcake liners for easy removal and cleanup.
- Cool the cheesecake bites completely before refrigerating to help them set properly.
- Chill for at least 2 hours before serving to achieve the right texture.
- Decorate with toasted or green-dyed coconut "nests" for visual effect if desired just before serving.
