Cheesecake Ice Cream Recipe (No Churn)

Ingredients

  • 2 cups heavy cream
  • 14 ounces sweetened condensed milk (1 can)
  • 2 ounces cream cheese room temperature (¼ block)
  • 1 teaspoon vanilla extract pure
  • ½ cup graham cracker crushed

Instructions

  1. In the bowl of a stand mixer fitted with the whisk attachment, beat the heavy cream, starting on low speed and gradually working up to high speed, until it becomes thick and forms stiff peaks.
  2. Add the sweetened condensed milk, cream cheese, and vanilla extract and fold them into the cream gently-- you don’t want to deflate the whipped cream.
  3. Fold in the graham crackers.
  4. Transfer the mixture to a loaf pan or silicone ice cream tub and wrap it tightly with plastic wrap.
  5. Place it in the freezer for at least 12 hours, preferably overnight.
  6. Scoop and serve with your choice of toppings.

Notes

  • Storage: Store cheesecake ice cream in an airtight container in the freezer for up to 1 week.
  • If you don’t have a silicone ice cream tube to use, you can always use a loaf pan to shape your ice cream.
  • Add different extras to your ice cream if you’d like, such as chopped nuts, chocolate syrup, and sprinkles.
