Description
This recipe starts by washing and drying whole strawberries, then removing their tops and hollowing out the centers. The bottoms are sliced thinly so the strawberries stand upright, then dipped in melted white chocolate followed by a coating of graham cracker crumbs, providing a crunchy base and a touch of sweetness contrasting the fresh fruit.
The cheesecake filling combines softened cream cheese, powdered sugar, fresh lemon juice, lemon zest, and heavy whipping cream whipped until smooth and creamy. This filling is piped into the hollowed centers of the strawberries, creating a rich, tangy contrast to the fresh, juicy fruit. The combination of textures from the creamy filling, crunchy coating, and tender berry creates a refined dessert experience.
These stuffed strawberries make individual-sized treats, suitable for parties or special occasions. Leftovers can be repurposed as dip for other fruit or stored chilled briefly. Adjust the number of strawberries depending on their size and serving needs.
Ingredients
- 1 pint strawberries or more as needed*
- 2 ounces white chocolate
- 1 tablespoon graham cracker crumbs
Cheesecake Filling
- 6 ounces cream cheese softened
- 4 tablespoons powdered sugar
- 1 teaspoon lemon juice fresh
- 1 teaspoon lemon zest
- 3 tablespoons heavy whipping cream
Instructions
- Wash strawberries and dry well.
- Cut the tops off the strawberries and hollow out the center using a small spoon or a strawberry huller (this is the type I use, works for tomatoes and strawberries)
- Place the chocolate in a small dish and melt on 50% power for about 15 seconds.. continue in 10 second increments until the chocolate is melted
- Slice a thin piece of the bottom of each strawberry so it can stand up and pat it dry with a paper towel. Dip the bottom of each strawberry into chocolate and then graham crumbs and place on a parchment lined pan.
- Meanwhile, beat cream cheese, heavy cream, sugar, lemon juice and lemon rind if using until smooth and creamy.
- Place the cream cheese mixture in a decorator or into a zippered bag. If using a zippered bag, snip off a corner.
- Pipe the cream cheese mixture into each strawberry. Garnish with sprinkles or graham crumbs.
Notes
- The quantity of strawberries needed depends on their size and how much filling each holds.
- Extra cheesecake filling can be used as a dip for other fruits or enjoyed on its own.
