Cheesy Baked Broccoli Bites
Description
This recipe calls for blanching chopped broccoli briefly before draining and mashing it finely. The broccoli is mixed with whole wheat breadcrumbs made from blended bread, diced onions, grated mature cheddar, whisked eggs, garlic powder, oregano, salt, and pepper. The mixture is shaped into small sausage-like portions and baked in a moderate oven until they develop a crisp surface.
The combination creates a savory snack with a balance of fresh vegetable flavor and melted cheese, contrasted by the crunchy exterior from baking. Garlic powder and oregano contribute subtle herbal and aromatic notes.
These bites can be served with various dipping sauces as an appetizer or included as a finger food during gatherings. The recipe allows experimenting with different cheeses or mixing broccoli with cauliflower for variation.
Breadcrumbs can be swapped for panko to increase crispiness, and spices adjusted to personal taste. Rolling into balls is an alternative shaping option. The bites keep their texture well after baking.
Ingredients
- 300 g broccoli chopped
- 3 lices whole wheat bread blended into bread crumbs
- 0.5 onion finely diced
- 60 g cheddar cheese grated, mature
- 2 egg whisked
- 1 teaspoon garlic powder
- 1 teaspoon oregano dried
- 1 pinch salt sea salt
- 1 pinch black pepper ground
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Add the broccoli to a pan of boiling water and simmer for 3 minutes. Drain and then add to a large bowl and mash until very fine.
- Add the rest of the ingredients to the bowl and mix well.
- Take out 1 tablespoon at a time and roll in to a small sausage and repeat until you have 20.
- Place on a lined or oiled baking sheet and cook in the oven for 25 minutes until they start to crisp up. Serve with your favourite dip.
Notes
- Try substituting part or all broccoli with cauliflower for a variation.
- Mix different cheeses such as Parmesan and mozzarella with cheddar to change flavor and texture.
- Form mixture into balls instead of sausage shapes for appetizer-style bites.
- Add spices like Mexican seasoning for a spicy variation.
- Use panko breadcrumbs instead of whole wheat for a crispier texture.
