Cheesy Baked Chilaquiles
Description
Cheesy Baked Chilaquiles start with a mixture of eggs, milk, salt, and pepper poured into a buttered baking dish and baked briefly until partially set. Then tortilla chips, fresh salsa, and shredded cheddar cheese are added on top before returning the dish to the oven to finish baking. This method yields a dish with tender baked eggs beneath a cheesy, saucy topping that softens the chips while retaining some texture.
The dish delivers a balance of creamy, tangy, and sharp flavors from the cheese and salsa, and an inviting mix of textures from the soft eggs and crisp chips. It is suitable as a hearty breakfast or brunch and can be served with accompaniments like sour cream or avocado slices if desired.
