Ingredients

Servings

for the meatballs

  • 500 g (1lb) pork mince or ground pork
  • 500 g (1lb) beef mince or ground beef
  • 1 onion finely chopped, large
  • 3 garlic crushed, cloves
  • 3 lices white bread crusts removed, soaked in ½ cup milk
  • parsley finely chopped, fresh; handful
  • 1 teaspoon thyme fresh leaves
  • 1 teaspoon black pepper freshly cracked
  • 2-3 teaspoons salt to taste

for the tomato sauce

  • 1 onion finely chopped
  • 4 garlic crushed, cloves
  • 800 g (28oz) tomato chopped
  • 2 teaspoons tomato paste
  • 1 cup beef stock
  • 5 fresh thyme sprigs
  • 1 rosemary fresh sprig
  • 2 teaspoons sugar
  • salt to taste
  • black pepper to taste

to finish

  • 1 cup mozzarella cheese grated
  • 3 tablespoons Parmesan Cheese grated
  • basil fresh leaves
  • ciabatta bread griddled

Instructions

  1. To make the meatballs, fry the onion and garlic in a splash of olive oil until soft and fragrant. Allow to cool.
  2. Place the pork, beef and onion mixture in a large bowl.
  3. Squeeze the soaked bread slices to get rid of any excess milk and add to the meat. Add the herbs salt and pepper then mix well. Fry a teaspoon of the mixture in a hot pan to check the seasoning and adjust accordingly.
  4. Form golf-ball sized meatballs and place on a clingfilm-lined tray.
  5. Brown the meatballs in a large, oven-proof pan then remove and set aside.
  6. To make the tomato sauce, add a splash of oil to the pan you used for the meatballs then fry the onion and garlic until soft and fragrant. Add the chopped tomatoes, tomato paste, beef stock, herbs, sugar and seasoning and allow to simmer, uncovered, for approximately 10 minutes or until the sauce has reduced by a quarter.
  7. In the meantime, pre-heat the oven to 200°C/400°F.
  8. Place the meatballs back into the sauce then place the pan into the oven.
  9. Allow the meatballs to bake for 10 minutes then remove from the oven and top with cheese.
  10. Place the pan back in the oven and allow the cheese to melt.
  11. Remove from the oven and top with fresh basil.
  12. Serve with griddled slices of ciabatta.
