Cheesy Baked Plantains with Chilli - West African Flavours
Description
This recipe involves slicing ripe, peeled plantains lengthwise while keeping them whole, then brushing them with oil and baking for 40 minutes. Halfway through, the plantains are turned to ensure even cooking until they achieve soft tenderness. Afterward, a slit is made on the top side for stuffing with finely grated cheddar cheese, and the plantains return to the oven to melt the cheese.
The combination highlights the natural sweetness of ripe plantains complemented by the sharpness and creaminess of the cheddar cheese, contrasted with the heat from the crunchy chili sauce drizzled at serving. Texturally, the plantains become soft with a slight caramelization around the edges, while cheese adds richness.
This dish serves well as a side for up to three people or as a main when serving two plantains each. Adding bacon is suggested for extra flavor.
For best results, ensure the plantains are ripe and oil is lightly applied to prevent drying. Baking times may vary depending on plantain size.
Ingredients
- 3 plantain ripe, peeled
- oil to brush plantains
- 85 g cheddar cheese 3 oz, finely grated, Barber's 1833 vintage reserve
- 1 tsp chilli sauce crunchy
Instructions
- Preheat oven to fan assisted 170C / 190C / 375F / gas 5.
- Make a lengthways slit along the plantains leaving at least 5cm at each end so they stay whole during baking.
- Brush the plantains with some oil, place them on a lightly oiled, lined baking tray and bake for 40 mins making sure to turn them half way through.
- Remove plantains from the oven, place them slit side up and stuff them with the cheddar cheese.
- Return stuffed plantain to the oven and bake for about 5 mins or until the cheese is melted.
- Serve plantains warm drizzled with chilli sauce.
Notes
- This recipe serves 3 as a side; use 2 plantains per person to serve as a main dish.
- Bacon can be added to enhance flavor if desired.
