Ingredients

Servings
  • 600 g prawns peeled and deveined, ideally tiger prawns
  • 50 g butter (20 g + 30 g separately)
  • 250 g button mushroom sliced, or chestnut mushroom
  • 2-3 green chili pepper cut in half, seeded and sliced, Turkish green chilies or 1 bell pepper
  • 3 cloves garlic (minced)
  • 5 medium tomato chopped, approximately 500 grams
  • ½ red chili optional, chopped or 1/2 tsp flaked chili
  • ½ teaspoon black pepper freshly ground
  • 1 teaspoon salt
  • ¼ teaspoon thyme dried
  • 200 g kasar cheese grated, or mozzarella or cheddar cheese

Instructions

  1. Preheat the fan oven to 200° C (400° F).
  2. Melt 20 grams of butter in a frying pan and sauté the mushrooms on high heat for a few minutes, until they are slightly softened.
  3. Add the peppers and garlic, and sauté for a couple of more minutes.
  4. Stir in the garlic then add the tomatoes, chili, black pepper, and salt. Stir to combine then gently cook on low heat for 6-7 minutes.
  5. Take the pan from the heat and add the shrimps, give it a stir.
  6. Spoon the mixture into an oven dish, Güveç dish, or 4 individual ramekins.
  7. Sprinkle on the cheese and thyme. Cut 30 grams of butter into cubes and spread them over the cheese.
  8. Cut 30 grams of butter into cubes and spread them over the cheese.
  9. Cook in the preheated oven for 10-12 minutes or until the cheese on the top is melted and the prawns are cooked.

Notes

  • Don't over cook the shrimps as they get rubbery and lose their taste. If you are using small shrimps, reduce the cooking time to avoid over cooking them.
  • If you use frozen shrimp for this recipe, make sure they are completely thawed before cooking them.
  • Leftover Karides Güveç would keep for up to two days when refrigerated in an airtight container.
  • A short video is attached to the recipe card to show how to peel and devein raw prawns.
  • You can freeze the leftovers if you used fresh prawns. However, if you made the dish with frozen prawns, I don't recommend freezing the leftovers!
