Cheesy Beef Quesadillas
Description
The preparation starts by browning ground beef and cooking out excess fat. Garlic is added briefly to release its aroma before tomato sauce and a spice blend of onion powder, cumin, chili powder, salt, and black pepper are stirred in. Heating the mixture melds the flavors and yields a saucy yet thick filling.
Flour tortillas are then heated in a separate skillet. The beef mixture is spooned onto half of each tortilla and topped with a generous amount of shredded Colby Jack cheese. Folding the tortillas creates a half-moon shape, and cooking each side until golden ensures a crisp exterior and melted, gooey cheese inside. The quesadillas are cut into wedges for easy serving.
This recipe serves well as a main dish for casual meals. The included note suggests storing leftovers in an airtight container in the refrigerator for up to 4-5 days, offering convenience for meal prep or multiple servings.
Ingredients
- 1 pound ground beef
- 1 teaspoon garlic minced
- 1 teaspoon onion powder
- ½ teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 can tomato sauce 8 oz can
- 4 tortilla 10 inch tortillas, burrito size
- 4 cups Colby jack cheese shredded
Instructions
- Brown the ground beef in a large skillet over medium high heat until no longer pink and browned. Drain off the excess grease and return the beef to the skillet.
- Stir in the minced garlic and heat for 1 minute until the garlic is aromatic. Then stir in the tomato sauce and seasonings. Stir well to combine all the ingredients. Heat over medium high heat for 2-3 minutes. Remove from heat and set aside.
- Heat a separate skillet over medium high heat. Place a tortilla in the skillet. Add the beef mixture to half the tortilla and top with 1 cup of the shredded cheese. Fold the tortilla in half. Cook until the bottom of the quesadilla is golden brown (2-3 minutes). Flip and cook until the opposite side is also golden brown (2-3 more minutes) and the cheese is melted.
- Remove from the skillet to a separate plate. Follow the same process with the remaining ingredients to form 3 more quesadillas. Slice each quesadilla into 4 pieces. Serve warm and enjoy!
Notes
- Store leftover quesadillas in an airtight container and refrigerate for up to 4-5 days.
