Description

The preparation starts by browning ground beef and cooking out excess fat.   • 1 pound ground beef
  • 1 teaspoon garlic minced
  • 1 teaspoon onion powder
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 can tomato sauce 8 oz can
  • 4 tortilla 10 inch tortillas, burrito size
  • 4 cups Colby jack cheese shredded

Instructions

  1. Brown the ground beef in a large skillet over medium high heat until no longer pink and browned.  Drain off the excess grease and return the beef to the skillet.
  2. Stir in the minced garlic and heat for 1 minute until the garlic is aromatic.  Then stir in the tomato sauce and seasonings.  Stir well to combine all the ingredients.  Heat over medium high heat for 2-3 minutes. Remove from heat and set aside.
  3. Heat a separate skillet over medium high heat.  Place a tortilla in the skillet.  Add the beef mixture to half the tortilla and top with 1 cup of the shredded cheese.  Fold the tortilla in half.  Cook until the bottom of the quesadilla is golden brown (2-3 minutes).  Flip and cook until the opposite side is also golden brown (2-3 more minutes) and the cheese is melted.
  4. Remove from the skillet to a separate plate.  Follow the same process with the remaining ingredients to form 3 more quesadillas.  Slice each quesadilla into 4 pieces.  Serve warm and enjoy!

Notes

  • Store leftover quesadillas in an airtight container and refrigerate for up to 4-5 days.
