Cheesy Beef Taco Skillet
Description
The Cheesy Beef Taco Skillet begins by browning lean ground beef and mixing it with diced yellow onions and bell peppers until they soften and brown slightly. Canned diced tomatoes with green chilis are added with taco seasoning to infuse the mixture with a mildly spicy, tangy flavor. Shredded zucchini is included to add moisture and texture without overwhelming the dish.
Baby kale and spinach are stirred in last, wilting down significantly and boosting the skillet's nutritional profile without excess bulk. The skillet is then topped with a blend of cheddar and jack cheese, which melts over the hot mixture to produce a creamy, rich texture. Fresh green onions add a mild pungency and color upon serving.
This dish can be enjoyed on its own or spooned over a bed of lettuce or rice, or wrapped inside tortillas as tacos or burritos, offering versatile serving options without complicating the preparation. No additional notes were provided, but the recipe highlights a balanced combination of vegetables, greens, and cheese for a filling meal.
