Cheesy Cauliflower Casserole

Cheesy Cauliflower Casserole is the perfect dish to get your family eating their veggies. It's easy to make and everyone will want seconds!

Ingredients

  • 1 head cauliflower
  • 6 tablespoons butter divided, unsalted
  • 3 tablespoons flour
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground
  • 2 cups milk whole
  • 1 cup mozzarella cheese
  • 1/2 cup Parmesan Cheese freshly grated
  • 1/2 teaspoon thyme dried
  • 1 cup panko bread crumbs

Instructions

  1. Preheat oven to 375 degrees and spray a 9x13 baking dish with vegetable oil spray (or brush with melted butter).
  2. Cut the cauliflower into florets (and if you want, peel the stalk and chop).
  3. Rinse and add (while wet) to a large microwave-safe bowl and cover with a wet paper towel.
  4. Cook for 5 minutes then let sit for 5 minutes covered.
  5. In a large saucepan on medium heat and add 4 tablespoons butter until just melted.
  6. Stir in the flour, salt, and pepper and cook for 1 minute, until bubbly and the flour is no longer raw.
  7. Slowly add in milk while whisking constantly until smooth.
  8. Let cook until bubbly and thick, then add in the mozzarella, parmesan, and dried thyme, stirring well until completely melted.
  9. Stir in the cooked cauliflower and coat well.
  10. Pour mixture into a baking dish and spread evenly.
  11. In a small saucepan on medium-high add the remaining 2 tablespoons butter and the panko bread crumbs.
  12. Stir well until panko is well coated.
  13. Sprinkle panko over the cauliflower and bake for 30 minutes.
