Description

This recipe coats cauliflower florets in light mayonnaise, which helps the seasoned breadcrumb mixture adhere while adding a slight richness. The coating combines Parmesan cheese, panko breadcrumbs, Italian seasoning, sea salt, black pepper, and olive oil for a flavorful crust. The florets are then spread on a baking tray and baked at 200°C (400°F) for 25 minutes, resulting in crispy, golden nuggets.

  • 300 g cauliflower cut into bite sized florets
  • 4 tablespoon mayonnaise light
  • 20 g parmesan finely grated
  • 50 g panko breadcrumbs
  • 1 tablespoon Italian seasoning
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
  2. Put florets of 300 g Cauliflower into a mixing bowl and add 4 tablespoon Light mayonnaise. Mix so that the florets are coated.
  3. In a separate bowl, combine 20 g Parmesan, 50 g Panko breadcrumbs, 1 tablespoon Italian seasoning, 1 pinch Sea salt and ground black pepper and 1 tablespoon Olive oil. Mix well.
  4. Add the breadcrumb mix to the cauliflower and mix so that the florets are coated in the seasoned breadcrumb.
  5. Transfer to a lined baking tray and cook for 25 minutes. When cooked, serve with more Parmesan.

Notes

  • Avoid overcrowding the baking tray to ensure the nuggets roast and develop a crispy crust rather than steaming.
  • Omitting Parmesan reduces crispiness but still works; it adds notable texture and flavor when included.
  • Mixing cauliflower with broccoli florets is an option for variation in flavor and color.
