Cheesy Gnocchi Bake

This Cheesy Gnocchi Bake combines pillowy gnocchi with a bacon-infused tomato sauce blended with sour cream and smoked paprika. The dish is topped with melted mozzarella for a creamy, slightly smoky flavor and rich texture. Baking the mixture creates a lightly browned cheese crust that adds a pleasing contrast to the softness beneath. It’s well suited for a satisfying meal and can handle leftovers versatilely.

Description

The recipe begins by cooking chopped bacon in an oven-safe skillet to render fat and develop smoky flavor. After draining excess fat, diced tomatoes, tomato paste, sugar, and crushed garlic are added and simmered briefly. Sour cream and spices including smoked paprika, salt, pepper, and fresh parsley are stirred in to create a creamy sauce with a subtle smoky note.

Gnocchi are cooked just until tender, drained, and added directly to the sauce along with some reserved cooking water to loosen the mixture. The gnocchi are coated in the tomato and cream sauce and topped with shredded mozzarella cheese. The bake is finished in a hot oven to melt and lightly brown the cheese, creating a golden crust over the soft, flavorful gnocchi.

This dish can be served as a main or side and is convenient for leftovers. Stored airtight in the fridge, it lasts several days and reheats well in the microwave, stovetop, or oven, with added water or broth to maintain moisture as needed.

Ingredients

Servings
  • 1 pound gnocchi
  • 6 lices Bacon chopped
  • 14 ounce diced tomatoes (1 can)
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 3 cloves garlic crushed
  • 3 tablespoon sour cream
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 2 tablespoon parsley chopped, fresh
  • 1 cup mozzarella cheese shredded

Instructions

  1. Make the sauce: Preheat the oven to 435℉. In a large oven-safe skillet, cook the bacon. Pour off all but 1 tbsp of the fat and add the diced tomatoes, tomato paste, sugar, and garlic. Simmer for 5 minutes. Reduce the heat to low, and stir in the sour cream, paprika, salt, pepper, and parsley.
  2. Cook the gnocchi: Bring a pot of water to a boil and cook the gnocchi according to package instructions. It should take just 1-2 minutes. Add the gnocchi straight from the boiling water to the skillet; reserve 1/2 cup of the pasta cooking water.
  3. Bake the gnocchi: Add a splash of the pasta cooking water to the skillet with the gnocchi and sauce. Mix everything together well, top with mozzarella cheese, and bake for 10 minutes. Garnish with parsley and serve.
