  • 4 tablespoon Parmesan Cheese grated fresh
  • olive oil cooking spray
  • 2 garlic crushed/minced, cloves

Instructions

  1. Pre heat oven to 200c.
  2. Grease a 12 hole muffin tin with olive oil/cooking spray.
  3. Add cream (4 tblsp), parmesan (4 tblsp) and garlic (2 cloves) to potatoes and mix, making sure slices are well coated. Add salt and pepper to taste.
  4. Divide potato mixture evenly between muffin tin holes.
  5. Bake for 50 mins or until potato is cooked through and the tops are crisp.

Notes

  • Common brushed potatoes (sebago) are used and can be found in most Australian supermarkets.
  • A mandolin is recommended for thin, even slicing of potatoes to ensure uniform cooking.
