Easy Cheesy Potatoes are the ultimate potato casserole recipe with fresh potatoes, sour cream sauce, crunchy topping and tons of cheese!

Ingredients

  • 6 cups russet potato peeled and diced into 1/2" cubes (Yukon Gold are good too
  • 2 cups sour cream
  • 1 can cream of chicken soup , 10.5 ounces
  • 8 tablespoons butter melted, unsalted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

Topping:

  • 2 cups cheddar cheese , shredded
  • 3 cups potato chips crushed, plain
  • 4 tablespoons butter melted, unsalted

Instructions

  1. Preheat oven to 350 degrees.
  2. To a large bowl add the potatoes, sour cream, cream of chicken, melted butter, salt, black pepper, pepper, garlic powder, onion powder and paprika.
  3. Stir well to combine the ingredients, then spread them into a greased 9x13" baking pan.
  4. Top with the cheese, potato chips and drizzle over the melted butter.
  5. Bake for 45-50 minutes, uncovered.
