Cheesy Smashed Potatoes

These cheesy smashed potatoes are baked and smashed baby red potatoes tossed with lemon and herbs, and sprinkled with two types of cheese!

Ingredients

  • 2 pounds small red baby potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ lemon thinly sliced
  • 4 ounces crumbled Feta cheese
  • 3 tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 425 degrees F and set a 9x13 baking dish to the side.
  2. In a medium sized bowl add potatoes, olive oil, garlic powder, onion powder, rosemary, kosher salt, and black pepper. Toss to combine and equally coat the potatoes in oil and seasoning.
  3. Add the potatoes to your 9x13 dish and place the lemon around the potatoes.
  4. Bake for 25 or until the potatoes are fork tender.
  5. Remove the potatoes from the oven and remove the lemon slices.
  6. With the help of a spatula, or the bottom of a glass, gently smash the potatoes.
  7. Generously sprinkle the tops of the smashed potatoes with feta and Parmesan cheese.
  8. Bake for another 25 minutes until the cheeses are melted and the edges of the potatoes are slightly crispy.

Notes

  • If you want your potatoes with extra lemon flavor you can toss them with 1 tablespoon lemon juice instead of just the slices.
