Cheesy Taco Pasta

Cheesy Taco Pasta combines seasoned ground beef and rotini pasta enveloped in a creamy cheddar and salsa sauce. Ground beef is cooked with taco seasoning and simmered with salsa, then mixed with al dente pasta and melted cheese to create a hearty, flavorful dish with a slight tang from salsa and a cheesy finish. This recipe offers a convenient way to enjoy taco flavors in a comforting pasta form.

Description

Cheesy Taco Pasta features ground beef cooked and drained to remove excess fat before being seasoned with a packet of taco seasoning and simmered with salsa and water to form a thick sauce base. Meanwhile, rotini pasta is cooked to al dente and drained. Once the pasta is ready, it's stirred into the beef mixture along with shredded cheddar cheese and cream to melt and coat the noodles thoroughly. Salt and black pepper adjust the final taste.

The dish is characterized by its creamy texture from melted cheese combined with the mild spiced ground beef and salsa, giving a familiar taco flavor in a pasta format. It’s suitable for casual dinners when a satisfying, one-pot style meal is desired.

Serving immediately is recommended to enjoy the cheese perfectly melted and the pasta well coated. No special ingredients or complex techniques are required, making this an approachable recipe for everyday cooking.

  • 1 packet taco seasoning
  • 1 1/2 cups salsa southwest
  • 1/2 cup water
  • 1/2 lb pasta I used rotini
  • 2 cups cheddar cheese grated
  • 1/4 cup cream
  • salt to taste
  • black pepper to taste

Instructions

  1. Bring water to boil to cook the pasta. Salt it and cook pasta until al dente.
  2. While the pasta is cooking, in a large skillet, cook ground beef, breaking apart as you go. Once thoroughly cooked, drain meat and run under hot water to remove any fat. Wipe out pan with paper towel and place back on heat. Pour cooked beef into hot pan with taco seasoning, salsa and water. Simmer until pasta is finished cooking.
  3. Once pasta is cooked, drain well and pour into skillet. Top with cheese, cream, salt and pepper. Stir until cheese melts and noodles are coated in sauce. Serve immediately.
