Cherry Cheesecake Cobbler Bars

Cherry Cheesecake Cobbler Bars feature a shortbread-like crust and topping enveloping a creamy cheesecake layer and a sweet cherry filling. The crust and topping are made from a simple blend of flour, sugar, salt, and melted butter, providing a buttery and firm base and crumbly top. The cheesecake layer is rich and smooth from cream cheese, sugar, egg, and vanilla. The cherry pie filling adds a juicy, tart contrast. Baked until set, these bars offer a textured combination of crumbly, creamy, and fruity elements.

Description

The bars start with a buttery shortbread crust that uses all-purpose flour, sugar, salt, and melted butter, pressed into a baking dish. Half is used as the base, and the other half crumbled on top so the cherry and cheesecake layers sit between two layers of tender crust.

The cheesecake layer blends softened cream cheese with sugar, egg, and vanilla extract for a smooth filling that sets during baking. Over this, canned cherry pie filling is spread evenly, offering a bright, sweet, and slightly tart fruit component. Crumbled shortbread dough is scattered atop to finish, adding texture and a rustic appearance.

Baked for almost an hour until the filling is firm but not overcooked, cooling completely before slicing is essential for clean bar shapes. These bars combine buttery, creamy, and fruity elements in every bite, making them suitable for dessert or snack occasions.

Ingredients

Servings

crust and topping

  • 3 cups all-purpose flour
  • 1 cups sugar
  • ½ teaspoon salt
  • ¾ cup butter unsalted, melted

cherry cheesecake

  • 8 ounces cream cheese softened
  • 1 cup sugar
  • 1 egg large
  • 2 teaspoons vanilla extract
  • 21 ounce cherry pie filling canned

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9x13 inch baking dish with nonstick spray.
  2. Stir the flour, sugar and salt together in a large bowl. Add the melted butter and stir until a shortbread-like dough comes together. I even use my hands to bring it together. Press half of the dough into the bottom of the dish. Keep the rest for the topping.
  3. In a bowl of your electric mixer (or with a hand mixer), beat together the cream cheese, sugar, egg and vanilla extract until creamy and smooth. Pour the mixture over the crust.
  4. Pour the cherry pie filling over the cream cheese layer and gently press it out towards the edges.
  5. Crumble the rest of the dough over top of the cherry mixture. Bake for 55 to 60 minutes, until the bars are set and no longer jiggly. Cool completely before slicing into squares!
