Cherry Cheesecake Shooters

Cherry Cheesecake Shooters combine a chilled cherry topping cooked with honey and optional whiskey, layers of fluffy cream cheese mixed with sweetened condensed milk, and a crushed graham cracker base. Served in small glasses, these layered desserts provide a creamy, tangy, sweet, and slightly tangy experience with textural contrast from the crunchy crumbs. They're designed for individual servings and can be adapted to larger portions with brandy glasses.

Description

This dessert begins by cooking frozen pitted cherries with honey, optional whiskey, and butter until hot and bubbly. A cornstarch and lemon juice mixture thickens the cherry topping, which is then chilled. Cream cheese is whipped with sweetened condensed milk until fluffy, producing a rich cheesecake layer. Graham crackers are crushed to form a crumbly base.

The assembly involves layering graham cracker crumbs at the bottom of small glasses, spooning in the cream cheese mixture, then topping with the cherry mixture. The layers create a creamy, sweet, and fruity dessert with crunchy texture at the base. The whiskey, if included, adds a subtle depth to the cherry topping without overpowering the dessert.

These shooters are designed as single-serve treats perfect for parties or special occasions. The recipe notes suggest that using larger brandy glasses transforms them into more substantial dessert portions, topped with sliced almonds for added texture and garnish.

Chilling the cherry topping fully before assembly is important to maintain distinct layers and prevent merging when serving. The cream cheese mixture should be refrigerated until use to keep its texture. The recipe requires a stand mixer for best cream cheese whipping results and some assembly tools like a pastry bag for neat layering, but these can be substituted if needed.

Ingredients

Servings
  • 24 ounces sweet cherries 2 12-oz bags, frozen, pitted
  • 1/4 cup honey
  • 1/4 cup whiskey (optional)
  • 1/4 cup butter
  • 1 teaspoon cornstarch
  • lemon juice of half
  • 16 ounces cream cheese 2 blocks, softened
  • 14 ounces sweetened condensed milk (1 can)
  • 12 graham crackers
  • 1/4 cup almonds sliced

Instructions

  1. In a medium saucepan, combine the cherries, honey and whiskey over medium heat and mix to combine.
  2. Add the butter and continue cooking until the cherries are hot and bubbly.
  3. In a separate dish, whisk together the cornstarch and lemon juice. Add cornstarch mixture to the cherries and cook for 2 additional minutes, stirring until the mixture is nice and thick.
  4. Remove from heat and transfer the cherries to a bowl. Refrigerate until they’re totally chilled and thick.
  5. In a stand mixer fit with the whisk attachment, whip the cream cheese and condensed milk until fluffy.Place the mixture into a pastry bag or plastic zipper bag with a medium hole snipped off the end. Store in a bowl in the refrigerator until ready to use.Place the graham crackers into a large storage bag and crush them into fine crumbs.

To assemble:

  1. Spoon a large helping of the crumbs into the bottom of a miniature wine glass or shot glass.
  2. Squeeze in 2-3 tbsp of the cream cheese mixture.
  3. Then spoon in 1-2 tbsp of the cherry mixture.
  4. Top with a few of the slivered almonds and repeat until all of the ingredients have been used.

Notes

  • Chill the cherry topping thoroughly before assembling to maintain distinct layers in the shooters.
  • Using larger brandy glasses will create fuller desserts rather than shooters; adjust portions accordingly.
  • Sliced almonds make a great topping for added texture and garnish when serving.
  • The cream cheese mixture should be kept refrigerated until use to retain fluffiness.
  • Stand mixer and pastry bag improve texture and assembly but can be substituted with manual mixing if necessary.
