Ingredients
Filling
- 500 g cherries Frozen and pitted
- 150 g sugar
- 1 tsp almond extract
- ¼ tsp ground allspice
Topping
- 60 g pastry flour Whole Wheat
- 100 g sugar
- 40 g plain flour
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- 100 ml milk
- 2 tbsp Bourbon Extract
- 2 tsp lemon peel Finely grated
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 180°C (350°F) Gas mark 4.
- Butter an 11x7x2-inch baking dish.
- In a large bowl combine the ingredients for the filling; toss well.
- Spread the filling evenly in the prepared dish.
- In a separate bow whisk the dry ingredients for the topping.
- Then gently stir in the wet ingredients for the topping.
- Spoon the topping mixture over the filling.
- Bake the cobbler until topping is golden brown and juices from filling are bubbling thickly at edges, about 50 minutes.
- Serve cobbler warm with ice cream or whipped cream.
