Cherry Dump Cake

Cherry Dump Cake is a straightforward dessert layering fresh or frozen pitted cherries with a flour-sugar mixture, topped with grated cold butter. The fruit's natural juices mingle with spices like cinnamon and nutmeg, while the baking powder in the topping helps create a light, cake-like texture. This rustic bake results in a warm, soft topping over tangy cherries, making it a practical choice for easy mixtures and casual desserts.

Description

This Cherry Dump Cake involves placing pitted cherries in a greased 9x13 pan, tossing them with cornstarch and warm spices. A mixture of flour, sugar, baking powder, and salt is evenly sprinkled over the fruit, followed by a layer of brown sugar and grated cold salted butter. As it bakes at 375°F, the butter melts and combines with the dry ingredients to form a textured topping that contrasts with the softened cherries beneath.

The finished cake offers a balance of sweet and tart flavors with the warmth of cinnamon and nutmeg. The topping becomes golden and slightly crisp on edges while remaining tender inside.

It's a minimal-prep dessert good for casual meals and can be served warm, possibly with cream or ice cream. The note about spreading the flour mixture evenly helps avoid raw spots, ensuring an even bake.

  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/2 cup butter cold, salted

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9x13 pan.
  2. Place cherries into the prepared pan. Toss with cornstarch, cinnamon, and nutmeg.
  3. In a medium-sized mixing bowl, stir together flour, sugar, baking powder, and salt until well mixed. Sprinkle this mixture over the cherries in an even layer.
  4. Sprinkle brown sugar on top.
  5. Use a cheese grater to grate the cold butter. Sprinkle the grated butter over the top of the brown sugar layer.
  6. Bake in the preheated oven for 35 to 40 minutes, or until the top is golden.

Notes

  • Use a spoon to gently flatten high spots of the flour mixture during baking to prevent uncooked patches.
