This Cherry Ice Cream (no churn) blends pitted cherries with whipped heavy cream and sweetened condensed milk to create a creamy, fruity frozen dessert without an ice cream machine. The cherry puree adds bursts of fresh fruit flavor and texture throughout the smooth, airy ice cream base.

Description

To prepare, cherries are pitted and blended until mostly smooth, retaining some small chunks for texture. Separately, heavy cream is whipped to medium-firm peaks to incorporate air, creating lightness. The cherry puree is gently folded with sweetened condensed milk into the whipped cream, combining flavors without deflating the mixture.

The mixture is then poured into a container and frozen. After about an hour, it is stirred gently to distribute any cherry pieces that settle, preserving the texture. It is then frozen further, ideally overnight, to reach a soft-serve consistency.

This method eliminates the need for churning equipment, making it accessible and convenient. The resulting ice cream is creamy, fruity, and naturally sweetened, highlighting the flavor of fresh cherries.

  • 8 oz Cherry
  • cup heavy cream double cream
  • ½ cup sweetened condensed milk

Instructions

  1. Pit the cherries and discard the stones. Blend the pitted cherries in a food processor or blender until relatively smooth (smaller chunks are fine).
  2. Separately, whip the cream until it forms medium-firm peaks.
  3. Carefully fold the cherry puree and sweetened condensed milk into the cream so that it is combined (no white streaks) but without loosing too much air.
  4. Pour the mixture into a plastic container or loaf tin, cover and transfer to the freezer. Leave to freeze for around an hour, then stir the mixture with a fork to mix through any chunks of cherry that may have fallen to the bottom (but without stirring so much you loose the air).
  5. Re-cover and freeze for a further 3 hours, minimum, for soft-serve or ideally overnight.
