Cherry Lemonade Popsicles

Cherry Lemonade Popsicles are made by pureeing fresh or thawed cherries with sugar and fresh lemon juice, then freezing the mixture in molds. This combination yields a sweet and tart frozen treat with a natural fruit texture and bright citrus notes, perfect for cooling off on a warm day.

Description

The recipe starts with cherries, either fresh pitted or thawed from frozen, combined with sugar and lemon juice. Blending these together in a food processor creates a smooth fruit puree. Optionally, pushing the mixture through a mesh sieve removes seeds and pulp for a finer texture, though this step is not required.

Filling popsicle molds nearly to the top allows for proper shape and placement of sticks without support. Freezing solid completes the process. To remove popsicles easily, briefly dipping the molds in hot water up to the top edge helps release them without melting.

The resulting popsicles capture the sweetness of cherries balanced with the acidity of lemon juice, creating a refreshing summer dessert. Wrapping and storing in plastic after unmolding maintains freshness if not consumed right away.

  • 1 pound Cherry fresh pitted, or frozen thawed
  • 2 Tbsp sugar
  • lemon juice of 1

Instructions

  1. Put all the ingredients in the bowl of a food processor and process until smooth. Scrape down the sides of the machine as necessary.
  2. This next step is optional, but I did it --- push the puree through a mesh sieve. Press firmly with the back of a spoon so you get as much as possible through.
  3. Fill the popsicle molds almost to the top. The puree will be thick enough that you can stand the sticks right in, without using the top to hold them.
  4. Freeze the popsicles until solid. To remove from the mold, immerse the mold up to, but not over, the top lip for just a few seconds in a sink full of hot water.
  5. To store the popsicles wrap well in plastic.
