Cherry Mash Bars

Cherry Mash Bars combine a boiled cherry and marshmallow base with a rich chocolate, peanut butter, and crushed peanut topping. The recipe creates layered bars with a creamy, slightly chewy bottom and a firm chocolate-peanut finish cooled in the refrigerator. These bars offer a mix of soft and crunchy textures alongside the sweet cherry flavor enhanced by vanilla extract.

Description

Cherry Mash Bars start with a base made by boiling together sugar, evaporated milk, salt, marshmallows, and margarine until smooth. Cherry chips (or a substitute of white almond bark with cherry extract and red coloring) and vanilla are stirred into the hot mixture before it is poured into a buttered baking dish to set slightly. A topping of melted semi-sweet chocolate chips mixed with peanut butter and crushed salted peanuts is spread over the bottom cherry layer. Once chilled, this topping firms to provide contrasting texture and flavor.

The bars combine the softness from the marshmallow and cherry base with the richer, denser chocolate and peanut topping. The peanut elements add a salty balance to the sweetness of the cherry mixture, while the chocolate binds the topping together.

These bars are best served chilled, making them suitable for dessert or a sweet snack. They can be cut into squares and stored in the refrigerator to maintain their texture. The recipe does not specify baking but relies on boiling and chilling steps to complete the preparation.
