Cherry Mug Cake

The Cherry Mug Cake is a quick, individual-sized dessert made by mixing flour, baking powder, sugar, milk, coconut oil, and almond extract, then folding in halved cherries before microwaving. The cake cooks rapidly in a mug, producing a soft, moist texture with fruity bursts from fresh cherries. Topping it with additional cherries and whipped cream adds freshness and creaminess, making it a convenient sweet treat.

Description

This recipe blends dry ingredients including white whole wheat flour, baking powder, sugar, and salt in a mug, then incorporates a liquid mixture of milk, coconut oil, and almond extract. Fresh cherries sliced in half are gently folded into the batter before cooking. Microwaving for one minute quickly sets the cake, with an additional brief cook time if needed to ensure it's fully done.

The resulting mug cake is moist and tender, with the cherries creating occasional fruity pockets of flavor. The almond extract contributes a subtle nutty aroma that complements the cherries. Topping the cake with more cherries and optional whipped cream adds texture contrast and a creamy finish.

This dessert is ideal for a quick single portion when craving something sweet without baking a whole cake. It can be prepared easily with basic pantry ingredients and fresh fruit.
