Cherry Pie Bars

Cherry Pie Bars feature a buttery crumb crust and topping that enclose a sweet, canned cherry pie filling. The bars have a tender yet slightly crumbly texture from the short crust baked before and after adding the filling, giving a balance of crisp edges and soft center. The recipe uses simple pantry ingredients and canned filling, making it practical for a quick fruit dessert with minimal preparation. The bars are cooled fully before slicing, which helps the filling set and makes neat servings easy.

Description

Cherry Pie Bars consist of a buttery short crust made from flour, sugar, and cubed butter cut into coarse crumbs. Half of this dough is pressed and baked as the base, then topped evenly with cherry pie filling before sprinkling the remaining crumb mixture on top. Baking again until the topping edges turn golden yields a dessert with flakey, crisp crust contrasting the tender cherry filling.

The bars provide a convenient alternative to a traditional pie, baked in a rectangular pan that produces easily portioned servings. The filling offers a sweet, fruity contrast to the rich crust, and the crumb topping adds texture variation.

These bars are ready to serve once fully cooled, which firms up the cherry layer for clean slices. They can be refrigerated covered for several days to maintain freshness and are versatile since other canned pie fillings like blueberry or strawberry can be substituted.

Ingredients

Servings
  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 12 tablespoons butter cut into cubes
  • 21 ounce cherry pie filling canned

Instructions

  1. Preheat oven to 350 degrees.
  2. Add flour, sugar, and butter to a medium mixing bowl and use a pastry cutter or two knives to cut the butter into the flour and sugar until you have coarse crumbs. Alternately, add the flour, sugar, and butter to the bowl of a food processor and process just until you have coarse crumbs. Do not overmix.
  3. Press half of the dough into the bottom of a 7x11 or 9x9 baking dish. Bake for 10 minutes.
  4. Remove crust from the oven and spread the cherry filling over the top. Sprinkle the remaining crust mixture evenly over the filling.
  5. Return to the oven for 50-60 more minutes or until the crust is starting to turn golden at the edges.
  6. Cool completely before cutting and serving.

Notes

  • This recipe allows using various canned pie fillings such as strawberry or blueberry, depending on preference.
  • Store the bars covered in the refrigerator for up to 3-4 days to keep them fresh.
