Cherry Pie Filling Recipe

The Cherry Pie Filling Recipe transforms frozen cherries into a thickened, sweet filling using sugar and cornstarch, simmered until glossy and cohesive. This filling provides a vibrant cherry flavor with a balance of sweetness and subtle tartness, perfect for use inside pies or as a topping. It thickens further as it cools, achieving a jam-like consistency that holds well in baked desserts.

Description

The recipe starts by mixing sugar and cornstarch to create a dry blend that thickens the fruit juices released by the cherries during cooking. Combining this mixture with frozen cherries and some water in a non-reactive pan allows the filling to cook evenly over medium heat. As it heats, the cornstarch activates, thickening the fruit juice into a smooth, glossy sauce. Stirring continuously prevents lumps and ensures the filling doesn't stick or burn.

Adding a squeeze of lemon brightens the flavor and balances the sweetness, especially if using sweeter cherry varieties. The finished filling cools to room temperature before refrigeration, where it further sets. This filling can be used for a 9-inch pie, providing the familiar texture and flavor of cherry pie filling without additives.

Ingredients

Servings
  • 2/3 cup sugar
  • 4 Tbsp cornstarch
  • 2 lbs cherries frozen
  • lemon a squeeze, optional

Instructions

  1. Whisk the sugar and cornstarch together until well combined.
  2. Add the cherries, sugar mixture, and 1/4 cup of water to a medium large non-reactive pan. Stir to combine and heat over medium heat, stirring constantly to dissolve the sugar and cornstarch. As the cherries heat they will start to release their juices.
  3. Once the mixture boils, reduce the heat and continue to simmer and stir for a few minutes until the filling has thickened to your desired consistency. Keep in mind your filling will thicken further as it cools.
  4. I like to taste the filling (be careful, it's hot!) to see if it needs any more sugar, or a squeeze of lemon.
  5. Let the filling cool to room temperature and then refrigerate in an airtight container until needed.

Notes

  • This recipe yields enough filling to fill a standard 9-inch pie crust.
  • If using sweet cherries, adjust sugar down and increase lemon juice to maintain balanced flavor.
