Cherry Tomato Tarts

Easy Cherry Tomato Tarts with roasted cherry tomatoes and herbed cream cheese on crispy puff pastry, finished with fresh basil leaves. It's one of the best appetizers for summer and is prepared very simply.

Ingredients

  • 8 oz (250 grams) cherry tomato halved
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 13 oz (400 grams) all-butter puff pastry ready-rolled
  • 4 tablespoons cream cheese
  • 2 egg divided, yolk
  • 1 tablespoon Parmesan Cheese grated
  • 2 tablespoons chives chopped fresh
  • basil fresh, handful, leaves

Instructions

  1. Defrost the puff pastry to room temperature. Preheat the oven to 400°F (200°C). Spread the cherry tomatoes evenly on a baking tray lined with parchment paper. Drizzle with olive oil and season with salt. Roast the cherry tomatoes for 15 minutes, or until softened.
  2. Meanwhile, unroll the puff pastry sheet and cut it into four 5x7-inch (12 x 18 cm) rectangles. Gently fold the edges of each rectangle up about 1 inch (2.5 cm) and prick the center with a fork. Transfer each pastry rectangle to a baking tray lined with parchment paper.
  3. Bake the pastry sheets for 10 minutes, until lightly browned and puffed up. Remove the baking tray from the oven. Press down the center of each pastry with a spoon or fork, keeping the border raised high.
  4. Prepare the filling by combining the cream cheese, one egg yolk, grated Parmesan cheese, and chopped chives in a bowl. Whisk until the mixture is smooth and creamy.
  5. Divide the filling among the pastries and smooth it out with the back of a spoon. Top with the roasted cherry tomatoes and brush the borders of each pastry with the egg wash (whisked egg yolk). Bake for 10 to 12 minutes, or until golden brown.
  6. Serve immediately, topped with fresh basil leaves.

  • Thaw the frozen ready-rolled puff pastry to room temperature before using.
