  • 1 heet puff pastry , thawed
  • 2 cups Cherry pitted
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon

Glaze

  • 1 large egg yolk
  • 1 tablespoon water
  • 1/4 cup sanding sugar coarse

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine the cherries and sugar in a saucepan and mash slightly, then stir in cornstarch.
  3. Cook the cherries over medium heat for 2 minutes or until thickened.
  4. Remove the cherries from the heat and stir in the cinnamon.
  5. Roll out the pastry dough and cut into 8 even squares.
  6. Evenly distribute the cherry mixture in the center of each of the 8 pastry squares, then fold one corner of each square of dough over to the opposite corner.
  7. Place the turnovers on a greased baking sheet.
  8. Beat the egg yolk with water in a small cup.
  9. Brush onto the top of the puff pastry and sprinkle with coarse sanding sugar.
  10. Bake for 30-35 minutes or until golden brown.
