Description
Chess Pie combines a traditional flaky pie crust with a filling that uses granulated sugar, melted butter, beaten eggs, half and half, cornmeal, white vinegar, flour, vanilla extract, and salt. The cornmeal adds a slight texture, and the vinegar subtly cuts the sweetness. The pie crust is pre-baked briefly to prevent sogginess, then the filling is poured in, and the temperature is lowered to allow the filling to set slowly over about 70 minutes. Cooling the pie fully before slicing ensures the custard firms up properly.
This pie typically serves well as a dessert after meals, pairing nicely with tea or coffee. The flavor is straightforward, leaning on its creamy, buttery sweetness and a minimal tang from the vinegar.
Chess Pie can be refrigerated covered for up to four days to maintain freshness. For longer storage, wrapping it tightly and freezing up to three months works well. Let the frozen pie thaw completely before serving.
Ingredients
- 1 pie shell unbaked
- 1 ½ cups granulated sugar
- ½ cup butter melted, unsalted
- 4 egg beaten, room temperature
- ¼ cup half and half light cream, or milk
- 2 tablespoons cornmeal
- 1 tablespoon white vinegar
- 1 tablespoon all-purpose flour
- 1 ½ teaspoons vanilla extract
- ½ teaspoon salt
Instructions
- Preheat the oven to 425°F.
- Line a 9-inch pie plate with pie shell and with a fork, poke the crust in a few places to allow steam to escape. Place a piece of parchment paper in the shell and fill it with pie weights or dry beans.
- Bake the crust for 5 minutes. Remove the weights and parchment and bake for an additional 3 minutes.
- Meanwhile, in a medium bowl, whisk sugar and melted butter. Add the eggs, cream, cornmeal, vinegar, flour, vanilla, and salt. Whisk until smooth. Pour the filling into the prepared crust.
- Place the pie in the oven and immediately reduce the oven temperature to 325°F. Bake for 70 to 75 minutes or until the pie is set.
- Cool completely on a baking rack before cutting, about 2 hours.
Notes
- Store covered chess pie in the refrigerator for up to 4 days to keep it fresh.
- For longer storage, wrap the whole pie or individual slices tightly in plastic wrap and freeze for up to 3 months.
