Description

  • 1 pie shell unbaked
  • 1 ½ cups granulated sugar
  • ½ cup butter melted, unsalted
  • 4 egg beaten, room temperature
  • ¼ cup half and half light cream, or milk
  • 2 tablespoons cornmeal
  • 1 tablespoon white vinegar
  • 1 tablespoon all-purpose flour
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 425°F.
  2. Line a 9-inch pie plate with pie shell and with a fork, poke the crust in a few places to allow steam to escape. Place a piece of parchment paper in the shell and fill it with pie weights or dry beans.
  3. Bake the crust for 5 minutes. Remove the weights and parchment and bake for an additional 3 minutes.
  4. Meanwhile, in a medium bowl, whisk sugar and melted butter. Add the eggs, cream, cornmeal, vinegar, flour, vanilla, and salt. Whisk until smooth. Pour the filling into the prepared crust.
  5. Place the pie in the oven and immediately reduce the oven temperature to 325°F. Bake for 70 to 75 minutes or until the pie is set.
  6. Cool completely on a baking rack before cutting, about 2 hours.

  • Store covered chess pie in the refrigerator for up to 4 days to keep it fresh.
