Chewy Sugar Cookie Recipe

Chewy Sugar Cookies are tender, soft-centered cookies sweetened with sugar and light corn syrup, featuring vanilla and almond extracts for aromatic flavoring. The dough is rolled into balls, slightly flattened, and baked lightly to maintain chewiness. A smooth almond frosting drizzled over warm cookies adds a sweet, nutty finish with optional sprinkles for decoration.

Description

This Chewy Sugar Cookie recipe uses a combination of butter, butter-flavored shortening, and sugar creamed together to create a light, fluffy base. The dough is flavored with vanilla and almond extracts alongside a bit of light corn syrup, which helps maintain moisture for chewiness. Flour is combined with baking powder and baking soda for leavening, then incorporated into the wet ingredients. The cookie dough is portioned into balls, gently pressed flat, and baked briefly at 350°F to achieve soft centers with slightly firm edges. Once baked, the cookies are allowed to cool until warm and then drizzled with an almond-flavored frosting made from powdered sugar, almond extract, and milk. Optional sprinkles add visual appeal. The frosting enhances the nutty flavor without overpowering the subtle sweetness and chewy texture of the cookies.

Ingredients

Servings
  • 3/4 cup sugar
  • 1/2 cup butter softened (not melted)
  • 2 tbsp shortening butter flavored
  • 1/4 tsp salt
  • 1 egg
  • 1 tbsp light corn syrup
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Instructions

  1. Preheat oven to 350 and line your cookie sheet with parchment paper.
  2. In your mixer, cream sugar, butter, shortening, and salt until light and fluffy.
  3. Add egg, corn syrup, vanilla and almond extract and beat until well mixed.
  4. In a separate bowl mix flour, baking soda and baking powder. Add to wet ingredients.
  5. Scoop (I use the cookie scoop tool) and roll into balls. Pat down balls a bit. Bake for 10-12 minutes. Let cool until warm.
  6. Make almond frosting: Mix 1 cup powdered sugar, ½ tsp. almond extract and a few tablespoons of milk (until it's the consistency you want).
  7. Drizzle frosting over warm cookies. Add sprinkles if desired.
