Chex Christmas Mix
Description
This Chex Christmas Mix starts with combining Cheerios, Rice Chex, Wheat Chex, Corn Chex, pretzel sticks, and M&M’s candies in a large bowl to evenly distribute the ingredients. White chocolate is melted using a double boiler and then drizzled over the cereal mixture, which is mixed to coat the pieces thoroughly. Additional white chocolate can be melted as needed to ensure full coverage. The mixture is spread onto parchment or wax paper and allowed to cool and harden for about an hour, after which it is broken into medium-sized chunks for serving.
The combination offers sweet, salty, crunchy, and chocolatey elements in every bite. The mix can be refrigerated or frozen for storage. For a gluten-free version, wheat Chex and gluten-containing pretzels should be omitted or replaced with gluten-free options.
Ingredients
- 3 cups Cheerios
- 3 cups rice chex cereal
- 3 cups wheat chex
- 2 cups corn chex
- 1 cups pretzel sticks
- 2-3 cups M&M’s candy
- 24 oz white chocolate plus an extra 4-8 oz if needed
Instructions
- In a large bowl combine the Cheerios, Chex, Pretzels and m&m’s. Mix them up a bit, making sure that everything is evenly distributed.
- Meanwhile, over a double boiler, melt the white chocolate according to the directions on the package.
- Once the chocolate has melted and is a smooth consistency, drizzle the chocolate over the cereal mix and combine with a wooden spoon or hands. Make sure all the cereal is covered in chocolate. If you need to melt the extra white chocolate to cover all the mix then go right on ahead!
- Once the entire batch has been combined, lay it out to dry on a large sheet of parchment or wax paper. Let dry for 1 hour so the chocolate is cooled and hard. Break it up into medium pieces and store in an airtight container in the fridge or freezer.
Notes
- Substitute gluten-free cereals and pretzels to make this snack gluten free.
- Use a double boiler to melt white chocolate smoothly without burning.
- Let the coated mix cool completely on parchment for about an hour for best texture before breaking into pieces.
