Chicken Afritada Recipe

Chicken Afritada combines chicken pieces with vegetables like potatoes, carrots, and green peas in a tomato-based sauce. The dish simmers slowly in chicken broth, allowing the flavors to meld into a hearty and comforting stew. This Filipino recipe balances tender chicken and vegetables with a subtly sweet and savory profile, supported by garlic and bay leaves.

Description

Chicken Afritada Recipe centers on chicken cooked in a tomato sauce enriched with chicken broth, bay leaves, and aromatics such as garlic and onion. The method involves sautéing the chicken to seal in juices before simmering it with the sauce and vegetables, including cubed potatoes, sliced carrots, and green peas. The gradual cooking allows the chicken to become tender while the vegetables soak up the flavorful broth.

The texture is softened by the slow cooking, with the potatoes and carrots providing mild sweetness and the peas contributing a pop of freshness. The dish’s seasoning with black pepper and salt balances the acidity of the tomato sauce without overpowering the other ingredients.

Chicken Afritada works well as a main dish served with rice to soak up the sauce. Its combination of ingredients makes it a complete meal that can be prepared ahead and reheated, maintaining the stew’s flavor and texture.
