Chicken Alfredo Casserole

A casserole of chicken, mushrooms and spinach swimming in creamy Alfredo sauce and baked with gooey cheese on top!

Ingredients

  • 16 ounces chicken chopped, cooked
  • 1 batch Alfredo sauce keto
  • 2 cups mozzarella cheese shredded
  • 9 ounces spinach thawed and well drained, frozen
  • 8 ounces baby bella mushroom sliced
  • ¼ cup chicken broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F.Prepare the Keto Alfredo Sauce according to the directions, then set it aside to cool slightly while you prepare the other casserole ingredients.
  2. Add the olive oil and mushrooms to a large skillet. Sauté until they have some good color, then set them aside to cool slightly.
  3. In a large mixing bowl, add in the mushrooms, chopped chicken, chicken broth, drained spinach, Alfredo sauce and 1 cup of the shredded mozzarella cheese.
  4. Stir until well combined, then pour into a 9 x 9 casserole baking dish that's been sprayed with olive oil.
  5. Add the remaining shredded mozzarella cheese over the top. Bake 25 minutes or until the cheese is golden and bubbly. Allow to cool slightly before serving.
