Chicken and Broccoli
Description
This Chicken and Broccoli dish features thinly sliced chicken breast marinated with baking soda, cornstarch, rice wine vinegar, and cold water to tenderize the meat and create a smooth texture. The chicken is quickly seared in sesame oil until golden brown, which locks in juices and enhances flavor. Steamed broccoli florets provide a contrasting crispness and vibrant green color.
The sauce is prepared in the same pan, combining garlic, soy sauce, chicken broth, hoisin sauce, Shaoxing wine, and sugar. A cornstarch slurry thickens the sauce as it simmers, ensuring a glossy coating over the chicken and broccoli. The gentle simmer and quick cooking maintain the chicken's tenderness and broccoli's crunch.
Serve this dish hot as a main course alongside steamed rice or noodles. The balance of salty, sweet, and aromatic elements from garlic, hoisin, and Shaoxing wine creates an inviting sauce that complements the lean protein and fresh broccoli well, making it suitable for family meals or weekday dinners.
