Description
This recipe starts by finely dicing one onion and shredding a small carrot, which are sautéed until soft and blended smooth. This vegetable puree is combined with ground chicken, while a second onion is blended and added for additional moisture and flavor. Whole wheat bread slices soaked in milk and squeezed dry provide a tender crumb and help bind the mixture. Grated mozzarella cheese is incorporated for mild cheesy richness, seasoned with salt and black pepper to taste, then mixed thoroughly.
The mixture is shaped into oval patties roughly hand-sized and quickly pan-fried over high heat until browned on each side, about one minute per side. They are then transferred to a baking dish, covered loosely with foil, and baked at 300°F for 30 minutes to cook them through without drying.

Ingredients
- 4 lb ground chicken
- 2 onion
- 1 carrot small
- 1/2 cup cheese mozzarella works great, grated
- 3 lices whole wheat bread
- 1/2 cup milk
- 1 tbsp salt adjust to taste
- 1 tsp black pepper adjust to taste
Instructions
- Dice one of the onions and shred carrot. Sauté the veggies until softened and blend them until smooth. In a large mixing bowl, combine the blended veggies with the ground meat.
- Using a food processor or blender, blend the other onion and add it to the meat mixture.
- In a separate dish, soak the bread slices in milk for about 10 minutes. Using your hand, squeeze out as much milk as you can from the bread and crumble it into the meat mixture. Add cheese to the meat mixture and season it with salt and pepper.
- Using your hands, mix the ingredients together until well-combined.
- Form meat patties into oval-shapes about the size of your hand. Over high-heat, fry each side just until they are browned (about 1 minute per side).
- Transfer the meat patties to a shallow baking dish and cover them loosely with foil. Bake at 300°F for 30 minutes.
- Serve kotleti hot along with your favorite sides!
