Chicken And Cream Cheese Taquitos

Chicken and Cream Cheese Taquitos are rolled corn tortillas filled with a creamy mixture of shredded chicken, cream cheese, taco seasoning, salsa, cheese, and cilantro. The rolled taquitos are fried or baked to a golden crisp exterior while keeping a rich, flavorful filling inside, served with sour cream and salsa for dipping.

Description

This recipe combines shredded rotisserie chicken with cream cheese blended with taco seasoning, garlic powder, salsa, cheese, and cilantro to create a creamy, spiced filling. Corn tortillas are warmed to make them pliable and then filled with the chicken mixture before being rolled tightly.

The taquitos are cooked either by frying in hot oil until golden brown on all sides, resulting in a crispy exterior, or baking them in a preheated oven for a less oily alternative. Frying requires careful temperature control to avoid burning, while baking provides a convenient option.

Serving with sour cream and salsa complements the rich, cheesy filling and crisp shell. These taquitos make a satisfying snack or meal component.

To prevent tortillas from cracking or unrolling, heating them covered with a damp paper towel increases pliability, and securing with toothpicks or holding with tongs during frying helps keep their shape. Cooked taquitos can be kept warm in an oven or stored refrigerated for several days. Freezing is possible after flash freezing on a tray with reheating in an air fryer recommended for maintaining crispness.

  • 1 (8-oz block) cream cheese (room temp)
  • 1.5 teaspoon taco seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons red salsa
  • 3 cups chicken cooked and shredded (Rotisserie)
  • 2 cups Mexican blend cheese
  • 1 cilantro chopped, large bunch
  • 20 corn tortillas
  • cooking oil for frying, an inch deep in the pan
  • sour cream for serving
  • salsa for serving

Instructions

Preparing The Chicken Filling

  1. In a medium bowl, stir together the cream cheese, taco seasoning, garlic powder, salsa, chicken, cheese, and cilantro.

Preparing The Tortillas

  1. Place the corn tortillas on a plate and cover them with a damp paper towel. Heat the tortillas in the microwave for 30 seconds. Add another 30 seconds, if necessary, to warm the tortillas.
  2. Keep the tortillas covered and warm. Remove one tortilla and fill it with 2 to 3 tablespoons of chicken filling. Roll the tortilla tightly. Repeat until all the tortillas are filled with the chicken mixture.

Frying Instructions

  1. Heat the oil over medium-high heat. Using tongs, hold the taquito together and place it, seam-side down, in the hot oil in one layer. Cook the taquitos until they are golden brown on all sides. Repeat until all are cooked. Skip to Draining the Taquitos instructions.

Baking Instructions

  1. Preheat the oven to 425 degrees F.
  2. Place the Chicken Taquitos in one layer on a foil foil-lined baking sheet, and bake for 15 minutes. Skip to Draining The Taquitos instructions.

Air Frying Instructions

  1. Preheat the air fryer for 5 minutes at 400 degrees F. Place the taquitos in one layer in the air fryer. Make sure that they are not touching each other. You may have to air fry the taquitos in batches. Air Fry for 7 minutes or until golden brown and crispy.

Draining The Taquitos

  1. Remove the taquitos and place them on a baking rack inside a baking sheet, or a paper towel-lined plate.

Serving the Taquitos

  1. Serve with sour cream, guacamole, and salsa.

Notes

  • Warming tortillas covered with a damp paper towel makes them pliable and easier to roll without cracking.
  • Secure taquitos with toothpicks or hold with tongs while frying to prevent unrolling.
  • Maintain frying oil temperature carefully to avoid burning; a candy thermometer helps monitor heat.
  • Cooked taquitos can be kept warm at 200°F in the oven when cooking in batches.
  • Store taquitos in an airtight container in the refrigerator for up to 5 days.
  • Freeze taquitos individually on a tray before transferring to freezer bags; store up to 3 months.
  • Reheat frozen or refrigerated taquitos in an air fryer at 350°F for about 3 minutes to keep them crisp.
