Chicken and Mango Salsa

This super fresh chicken dinner can be made in as little as 30 minutes. It is packed with wholesome sweet and savory flavors and perfect for a family dinner or entertaining guests!

For the chicken

  • 3 lbs chicken breast boneless, skinless
  • 1 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin ground
  • 1 tsp salt
  • 1 lime juice of

For the mango salsa

  • 2 Mango diced
  • 1 avocado diced
  • 1 red bell pepper diced
  • 1/2 cup onion red, chopped
  • 1/4 cup cilantro chopped
  • 1 jalapeno pepper seeded, and diced (optional)
  • 1 tbsp vegetable oil
  • 1/2 lime juice of

Instructions

  1. Combine the chicken with the seasonings, lime juice, and oil. Mix well so all of the meat is evenly coated and set aside.
  2. Combine all ingredients for the mango salsa and then mix well so that the flavors are evenly distributed.
  3. Heat the grill to medium heat and brush with oil to prevent sticking. Place chicken on the grill and cook for 4-6 minutes per side, depending on thickness. Cook to an internal temperature of 165˚F.
  4. Once done, remove chicken from grill and allow to rest for 5 minutes.
  5. Serve the chicken with mango salsa over the top. Enjoy!

Notes

  • *This method works best with thin chicken breasts, so if you plan to cook this way, you can cut or pound the chicken breast to 1/2" thickness.
  •  
  • Heat pan with 1 tbsp oil over medium high heat.
  • Once hot, place each chicken breast flat in the pan. Cook for 2-4 minutes, or until a crust has formed.
  • Flip the chicken breast, cover the pan and reduce the heat to low. Cook an additional 5-8 minutes or until chicken is cooked through (internal temp of 165˚F)
  • Preheat oven to 375˚F
  • Place chicken breast flat on a large baking sheet.
  • Bake for 15-25 minutes or until chicken is cooked through (internal temp of 165˚F)
