Chicken & Avocado Stuffed Arepas

These Chicken & Avocado Stuffed Arepas are a wonderful gluten-free alternative to your typical sandwich!

Ingredients

Servings
  • One batch arepas
  • 3 tbsp olive oil
  • 1 clove garlic crushed
  • 1 c onions finely chopped
  • 1 c bell pepper finely chopped
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp Sriracha or other hot sauce *
  • 3 ½ c shredded chicken cooked
  • 1 c refried black beans
  • 1-2 large avocados cut into cubes
  • queso fresco
  • cilantro

Instructions

  1. Prepare one batch of arepas.
  2. In a medium saucepan over medium heat add olive oil, garlic, onions and bell pepper.
  3. Saute for 5-7 minutes, stirring occasionally.
  4. Add salt, pepper, Sriracha and shredded chicken. Cook until chicken is heated through.
  5. Fill each arepa with 2 tablespoons refried beans and ~½ cup of the chicken mixture. Repeat with remaining arepas.
  6. Serve stuffed arepas with avocado, queso fresco and cilantro. Enjoy!

Notes

  • *Sriracha, or hot sauce, is optional.
