Chicken Bhuna
Description
This Chicken Bhuna recipe begins with sautéing finely chopped onions until soft and slightly browned, which forms a savory base. Garlic, ginger, and chopped green chilies are then added to release their aromas. Chopped tomatoes are cooked until soft, producing a pulpy, rich sauce. Boneless chicken pieces are stirred in and seared to coat them in the sauce before ground coriander, cumin, turmeric, chili powder, and salt are added for the characteristic Bhuna flavor profile.
Two rounds of water addition and simmering ensure the chicken cooks thoroughly while thickening the sauce to a hearty consistency. The slow cooking melds the spices and ingredients, resulting in a robust, spicy curry with tender chicken pieces. Fresh chopped coriander garnishes the dish before serving, adding brightness.
Traditionally served with steamed rice or Indian bread, this curry provides a satisfying main course with a balance of heat and spice from the green chilies and chili powder.
