Description

This recipe blends extra lean ground chicken with finely minced garlic, diced white onion, spinach, cherry tomatoes, and crumbled feta cheese along with an egg and a tomato-garlic-basil marinade mix. The finely diced vegetables integrate evenly throughout the meat to add moisture and flavor. The addition of feta cheese introduces creamy, tangy flavor and a slightly crumbly texture.

  • 1 lb ground chicken extra lean
  • 1 packet marinade mix McCormick’s Grill Mates Tomato, Garlic, & Basil
  • 1 egg
  • 1 tbsp garlic minced
  • ¼ cup white onion diced
  • ¼ cup cherry tomato diced
  • ¼ cup spinach diced
  • ¼ cup feta cheese crumbled

Instructions

  1. First, mince the garlic and finely chop the white onion, spinach and cherry tomatoes (smaller is better!).
  2. In a mixing bowl, combine chopped white onion, spinach, cherry tomatoes, egg, minced garlic, ground chicken, seasonings, and crumbled feta cheese. Mix until all ingredients are combined.
  3. Using your hands, form the mixture into 4 equally sized burger patties.
  4. Then, heat a stove pan to medium heat and spray with cooking spray. Place burgers on the hot pan and cook for approximately 6 minutes on each side or until chicken reaches an internal temperature of 165°F.
  5. While the burgers cook, prepare your toppings. Caramelize some onions, slice lettuce and tomato and toast your buns. I love putting cheese and avocado on them and broil at 525°F for 2-3 minutes, or until bread starts to brown.
  6. Serve with the toppings and condiments of your choice and enjoy!

Notes

  • If the burgers do not hold shape well, add 1/4 cup breadcrumbs to the mix as a binding agent.
  • Ensure all vegetables and mix-ins are finely diced to help with binding and texture.
  • Store cooked or uncooked burger patties in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
  • When grilling, cook first on foil to avoid crumbling, then finish on the grill for char marks once patties are mostly cooked through.
