Chicken Caesar Salad
Description
This Chicken Caesar Salad features boneless, skinless chicken breasts seasoned with Cajun spices and cooked to develop a dark, flavorful crust either in a pan or finished in the oven. The chicken is sliced and combined with fresh romaine lettuce, crisp croutons, and shredded Parmesan cheese.
The dressing is prepared from mayonnaise, grated Parmesan, fresh lemon juice, anchovy paste, Worcestershire sauce, Dijon mustard, and minced garlic, creating a creamy and savory coating for the salad. Tossing the salad with this dressing ensures each bite is flavorful without overpowering the crisp greens and seasoned chicken.
Cajun seasoning adds a spice element that can be adjusted depending on the salt content of the seasoning used. This salad is suitable as a filling lunch or dinner and can be served immediately after assembly to maintain crispness and flavor contrast.
Allow cooked chicken to cool before slicing to retain juices and ensure even slices. Tasting the Cajun seasoning before use helps modulate the saltiness of the dish.
Ingredients
- 4 chicken breast boneless skinless
- 2 tablespoons olive oil divided
- 2 tablespoons Cajun seasoning or to taste
- 8 cups romaine lettuce washed, dried
- 1 ½ cups croutons
- ¾ cup Parmesan Cheese shredded
Dressing
- 1 cup mayonnaise
- ¼ cup Parmesan Cheese grated
- 3 tablespoons lemon juice fresh
- 1 tablespoon anchovy paste
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- 2 cloves garlic minced
Instructions
- Combine all dressing ingredients and set aside.
- Combine the chicken breasts and 1 tablespoon olive oil in a small bowl. Season with cajun spice, making sure to cover all of the chicken.
- Heat up a large pan with remaining olive oil, add the chicken once hot, and cook on each side ensuring that a dark crust is forming, "blackening" the chicken.
- Cook until chicken has reached 165°F internally or place in the oven to finish them.
- Once cooled, cut chicken breasts into slices.
- In a large bowl, cut romaine lettuce into bite size pieces. Add croutons, parmesan cheese, and prepared chicken. Top with dressing and toss.
Notes
- Homemade Cajun seasoning often contains less salt than store-bought varieties; adjust quantity accordingly.
- Let chicken cool before slicing to keep slices juicy and maintain texture.
