Chicken Caprese salad
Description
This Chicken Caprese salad starts with chicken breasts sliced horizontally into cutlets, marinated in a balsamic and pineapple vinaigrette for 10 to 30 minutes. The marinated chicken is pan-seared until golden and cooked through, then rested before slicing. The salad portion includes halved cherry tomatoes, halved or quartered bocconcini mozzarella balls, and fresh basil leaves tossed with a small amount of the vinaigrette.
A bed of lettuce is arranged on a serving platter, topped with the sliced chicken, tomato and mozzarella mixture, and sliced avocado. Additional vinaigrette is served on the side to dress the salad as desired. The combination balances tender, juicy chicken with creamy cheese and ripe tomatoes, enhanced by fragrant basil and creamy avocado.
This dish works well as a light lunch or dinner salad with a refreshing flavor profile and contrasting textures. Ingredients
- 4 chicken breast cut in half horizontally to result in 2 cutlets per breast
- 1 cup vinaigrette Knorr brand, balsamic and pineapple flavored
For the Caprese salad
- 4 cups cherry tomato halved
- 100 g Bocconcini mozzarella halved/quartered
- 1 cup basil fresh leaves
- 8 cups lettuce
- 1-2 avocado sliced
- vinaigrette to serve, Knorr brand, balsamic and pineapple flavored
Instructions
- For the chicken, pour the Knorr Balsamic and Pineapple salad dressing over the chicken and allow to marinade for up to 30 minutes (but as little as 10 minutes will be fine).
- Heat a large, non-stick frying over medium-high heat and cook the chicken until golden brown on both sides and cooked through. Remove from the pan and allow to rest for 5 minutes before slicing.
- For the salad, combine the tomatoes, mozzarella and basil in a bowl and add 2 tablespoons dressing.
- To serve, spread the lettuce onto a large platter then top with the sliced chicken, tomatoes and mozzarella mixture and add the sliced avocado.
- Serve with extra dressing on the side.
