Chicken Chili
Chicken chili is a comforting, hearty dish that combines tender chicken, beans, and spices. A perfect choice for cold weather, this one-pot meal offers the flavors of a slow-cooked stew in a fraction of the time. Ideal for family dinners or social gatherings, chicken chili is easy to make and highly customizable.
Ingredients
- 1 ½ pounds boneless skinless chicken breasts cut into bite-sized pieces
- 1 tbsp olive oil
- 1 medium onion diced
- 3 cloves garlic minced
- 2 cans White beans drained and rinsed (15 ounces each)
- 1 can diced green chilies 15 ounce can
- 2 cups chicken broth
- 1 tsp ground cumin
- 1 tsp dried oregano
- ½ tsp chili powder
- salt to taste
- pepper to taste
- 1 tsp lime juice
- fresh cilantro chopped (for garnish)
- sour cream for garnish, optional
- Sliced Jalapenos for garnish, optional
Instructions
- First, heat olive oil in a large pot or Dutch oven over medium heat.
- Add the diced onion and minced garlic to the pot. Sauté for about 5 minutes until the onion becomes translucent and the garlic is fragrant.
- Add the chicken pieces to the pot and cook until they are no longer pink, stirring occasionally.
- Add the drained white beans, diced green chilies, chicken broth, ground cumin, dried oregano, and chili powder to the pot. Stir well to combine.
- Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 to 30 minutes to allow the flavors to meld together.
- Stir in the lime juice and adjust the seasoning if needed.
- Finally, erve the Verde Chicken Chili hot, garnished with fresh cilantro, sour cream, and sliced jalapenos if desired.

- Feel free to use chicken breasts or chicken thighs.
- Adjust the seasonings as you cook.
- Store leftovers in the fridge for up to 5 days.
- To reheat, add the leftovers to a skillet over medium heat. Heat until warmed through. Add more broth to the pot if needed.
