Chicken Curry

This Chicken Curry combines thinly sliced chicken breast cooked with fresh green beans and bell pepper in a thickened yellow curry sauce made with coconut milk, sugar, ginger, and curry powder. The dish offers a balance of savory and mildly sweet flavors with tender chicken and crisp vegetables, finished with fresh basil and scallions.

Description

The recipe starts by whisking together coconut milk, sugar, corn starch, yellow curry powder, ginger, and salt to form a flavorful sauce base. Chicken breast pieces cook quickly in sesame oil until browned, and are then set aside. Fresh green beans and bell pepper slices are sautéed in the same pan to maintain texture and color.

Chicken returns to the pan along with the curry sauce, which thickens as it simmers, coating the ingredients with a smooth, fragrant curry glaze. The dish is garnished with fresh basil and chopped scallions for herbal brightness. It can be served over rice or cauliflower rice for a complete meal.

This curry offers a mild heat level and a blend of sweet and savory notes from both the sauce ingredients and the fresh vegetables, yielding a balanced and approachable dish that brings curry flavors without overwhelming spice.

Ingredients

Servings
  • ½ oz coconut milk well shaken, canned
  • 1 tablespoon sugar
  • 2 teaspoon corn starch
  • 2 teaspoon yellow curry powder
  • ½ teaspoon ginger
  • ½ teaspoon kosher salt
  • 1 pound chicken breast sliced into even sized pieces
  • 3 tablespoon sesame oil
  • ½ lb green beans fresh, trimmed
  • 1 red bell pepper or yellow bell pepper, sliced thin
  • 2 scallion chopped
  • basil for garnish

Instructions

  1. Add first 6 ingredients to a medium bowl and whisk well.  It's okay if the coconut oil is a bit lumpy.  Set aside.
  2. Heat 1 ½ tablespoon sesame oil in a nonstick skillet over medium-high heat.  Add chicken pieces and cook 3 minutes per side.  Remove chicken from pan and cover with foil.
  3. Add remaining 1 ½ tablespoon oil to the pan.  Add beans and peppers and saute for 4-5 minutes.
  4. Add chicken back to pan.  Whisk the sauce again then add to the pan.  Cook until sauce thickens and chicken is cooked through about 4 minutes.  Sprinkle with fresh basil and chopped scallions.
  5. Serve with rice or cauliflower rice.
