Chicken Fajitas

These easy Chicken Fajitas are just that. Chicken fajitas full of flavor, perfectly seasoned, easy, and just what you want when you're craving fajitas - no funky stuff.

Ingredients

  • 4 tablespoons canola oil divided, or olive oil
  • 2 tablespoons lime juice or lemon juice
  • 1-1/2 /2 teaspoons seasoned salt
  • 1-1/2 /2 teaspoons oregano dried
  • 1-1/2 /2 teaspoons cumin ground
  • 1 teaspoon garlic powder
  • 1/2 /2 teaspoon chili powder
  • 1/2 /2 teaspoon paprika
  • 1/2 /2 teaspoon red pepper flakes optional, crushed
  • 1-1/2 /2 pounds chicken breast cut into thin strips, boneless, skinless
  • 1/2 /2 red bell pepper julienned, medium, sweet
  • 1/2 /2 green bell pepper julienned, medium size
  • 4 green onions , thinly sliced
  • 1/2 /2 cup onion chopped
  • 6 flour tortillas (8 inches), warmed
  • cheddar cheese taco sauce, salsa, guacamole and sour cream, shredded

Instructions

  1. In a large resealable plastic bag, combine 2 tablespoons oil, lemon or lime juice and all the seasonings; add the chicken. Seal and turn to coat; refrigerate for 1-4 hours.
  2. In a large skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm.
  3. Discard marinade. In the same skillet, cook chicken over medium heat for 5-6 minutes or until no longer pink. Return pepper mixture to pan; heat through.
  4. Spoon filling down the center of tortillas and top with top with your favorite fajita toppings: cheese, taco sauce, salsa, guacamole and sour cream.
