Description
This Chicken Fiesta salad mixes diced, skinless cooked chicken with halved grapes to bring bursts of sweetness and juicy texture. The dressing combines mayonnaise and whipped cream for a light, creamy base, enriched with curry paste or powder for mild warmth and depth. Apricot jam or mango chutney adds a gentle fruitiness and sweetness, enhancing the overall flavor complexity.
The salad is chilled before serving to blend flavors and improve texture. It is versatile in use: it can be served over cold rice with salad or used as a sandwich filling. Omitting whipped cream when using as a sandwich spread keeps it firmer and less creamy.

Ingredients
- 300 g chicken skin removed & chopped, leftover cooked
- 100 g grape halved, red and green, seedless
- 4 tbsp mayonnaise
- 140 ml whipping cream whipped, double or whipping cream
- 2 tsp curry paste or curry powder to taste
- 1 tbsp apricot jam or mango chutney
- salt freshly ground
- black pepper freshly ground
Instructions
- In a large bowl mix together the mayonnaise, whipped cream, curry paste or curry powder and apricot jam or mango chutney.
- Fold in the chicken and grapes and season to taste.
- Chill.
- Serve with cold rice and salad or use as a sandwich filling if making a smaller quantity.
Notes
- Omit the whipped cream when using Chicken Fiesta as a sandwich filling for easier spreading and less creaminess.
- Adjust curry paste or powder according to your preferred spice level.
