Description
Chicken Flautas feature tightly rolled tortillas filled with a seasoned mix of shredded chicken, cheese, salsa, and chiles. After assembling, the flautas are fried in hot oil until the exterior crisps to a golden brown, sealing the flavorful filling inside.
The frying process creates a crunchy shell surrounding a warm, melty filling that combines creamy cheese, mildly spicy salsa, and tender chicken. The seasoning balance of garlic salt and black pepper enhances the savory profile.
These flautas are served warm with a variety of toppings such as shredded lettuce, chopped tomatoes, salsa, guacamole, and ranch dressing to add freshness, creaminess, and bright flavor contrasts to the crispy fried flautas.
For convenience, the chicken filling can be prepared ahead and refrigerated up to 48 hours. Alternatively, flautas can be baked or air-fried with specific temperatures and times provided in the notes for less oil usage. Leftovers store well refrigerated for a few days or frozen for longer preservation.
Ingredients

- 3 cups chicken or shredded beef, shredded, cooked
- 1 cup Mexican blend cheese shredded
- ½ cup salsa store-bought or homemade
- 1 (4-ounce) can diced chiles
- garlic salt to taste, with parsley flakes
- black pepper to taste
- 12 (6-inch) flour tortillas or corn tortillas

Instructions
- Preheat the oven to the warm setting or about 200°F.
- Fill a large saucepan with about ¾ inch oil. Heat over medium heat to 375°F.
- In a medium bowl, combine chicken, cheese, salsa, diced chiles, garlic salt, and pepper.
- Working with 4 tortillas at a time, spread a heaping spoonful of chicken filling along the middle of each tortilla. Roll the tortillas tightly around the filling and secure each one with a toothpick.
- Using tongs, hold each flauta in hot oil until firm, then release to continue cooking. Cook until golden brown, about 2 minutes, then remove to a paper towel–lined plate and immediately season with salt.
- Transfer flautas to a foil-lined baking sheet and keep warm in the oven while assembling and cooking the remaining tortillas. Serve warm with toppings.
Notes
- The chicken filling can be made ahead and kept refrigerated for up to 48 hours before assembling flautas.
- To bake flautas, place them seam side down in a greased dish and bake at 350°F for 20 minutes.
- For air frying, arrange seam side down in a sprayed basket, avoiding contact, and cook at 400°F for 6-7 minutes, flipping halfway through.
- Store any leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
