Chicken Francese

Chicken Francese has tender chicken cutlets dredged in flour and then egg, pan-fried until crispy golden, with a lemony wine sauce on top.

Chicken

  • 2 lbs chicken breast boneless
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper ground
  • 1/3 cup all-purpose flour
  • 2 egg large
  • 2 tbsp parsley finely chopped (optional, fresh
  • 1/4 cup Parmesan Cheese shredded (optional)
  • 2 tbsp olive oil

Lemon Sauce

  • 1 lemon thinly sliced
  • 3 tbsp butter
  • 1 clove garlic minced
  • 3 tbsp all-purpose flour
  • 1 1/2 cups chicken stock
  • 1/3 cup white wine dry
  • 1/2 tsp kosher salt
  • 1 tbsp parsley finely chopped for garnish, fresh

Instructions

  1. Slice each chicken breast horizontally to make 4 cutlets. Season bother sides with salt and pepper.
  2. In a bowl whisk the eggs, parsley and parmesan cheese. In a separate bowl or plate add the 1/3 cup of flour.
  3. In a large skillet heat the olive oil over medium-high heat.
  4. Dredge the cutlets in the flour and dip in the beaten egg mixture. Sauté and brown the chicken, 3 minutes per side. Remove from pan and set aside.
  5. Add the lemon slices to the skillet and cook until soft, about 30 seconds per side. Remove from skillet and top chicken with them.
  6. Over medium heat melt the butter in skillet. Add the minced garlic and cook another minute.
  7. Add the 3 tablespoons of flour and stir, cooking for 1 minute. Using a whisk, slowly add the chicken stock, whisking constantly. As sauce thickens add the white wine, lemon zest and season with salt. Let cook another 2-3 minutes.
  8. Transfer the chicken back to the pan and spoon sauce over and top with lemon slices or place chicken on serving platter, top with sauce and lemon slices and serve with a sprinkle of chopped parsley.
